Composting for a Better Earth
Area residents can now sign up for a composting subscription through Better Earth Logistics, and drop off their waste at a new kiosk outside of Sous Chef in Peoria’s Warehouse District. Each subscription includes a kit with instructions and a key allowing access to the kiosk.
According to the U.S. Department of Agriculture, 30 to 40 percent of our food supply ends up in municipal landfills. By looking at the waste created, composting encourages people to change their habits. “Not only have we seen customers cut down on their food scraps, but they are switching to compostable products to reduce their waste even more,” explain Yvonne and Luke Rosenbohm of Better Earth Logistics.
Sous Chef already composts their own waste, and the addition of the kiosk fits into their larger mission. “We all know that climate change is real and we need to be changing our habits, and composting is one large piece of that puzzle,” explains Sous Chef co-owner Katie Couri Rodolfi. “They can take table scraps, bones, animal fats, dairy and more.”
“One five-gallon bucket of compostable waste every couple of weeks doesn’t seem like much, but when you have multiple families diverting their food waste from the landfill, it quickly adds up,” the Rosenbohms add. “Not only are we reusing the food scraps, we aren’t wasting all the resources that went into growing the food because it gets put right back into the earth… You’re also reducing the methane gases that are made when food goes into the landfill and giving the landfills a longer lifespan.”
